½ tablespoon ginger, finely minced
½ tablespoon garlic, finely minced
3 tablespoons LUCKY DRAGON Soya Sauce
1 tablespoon CO-OP GOLD PURE Organic Sesame Oil
¼ cup vegetable oil
2 cups broccoli, one-inch pieces
1 cup red onions, medium sliced
¼ cup CO-OP GOLD Peanuts, toasted sauce
¼ cup CO-OP GOLD Smooth Peanut butter
¼ cup SAMBAL OELEK Chili Paste
1 ½ cups JOYYA 2% Ultrafiltered Milk
2 tablespoons lime juice
½ teaspoon ground cumin

Prep Time: 10 minutes
Cook Time: 30 minutes
Serves: 4
Place chicken with ginger, garlic, soya sauce and sesame oil in a bowl and mix well. Marinate for two hours in the fridge.
Mix all sauce ingredients with a whisk and set aside for later.
Once the chicken has marinated, place a large frying pan on medium-high heat and add vegetable oil. Allow to heat up. Add chicken without overlapping so all pieces can brown. Flip chicken after two minutes and cook other side.
Next, add broccoli and onions to pan and sauté for three to four minutes. Turn heat down to low and add sauce. Allow to simmer with a lid on for five to eight minutes. Add more milk if sauce is too thick. Serve over steamed rice and garnish with toasted peanuts.
